There is an internet site: evite.com. That has a drink calculator, and also tells you what and how many things to serve. By the rules that I have followed, you have to plan five pieces of each finger food per person.

It depends on how many different items you have at the party. It depends on what your portion size is. These are details you need to know like the whole menu. My husband orders food for a high end prep school for over 600 people for each meal a day. Sometimes he has to order for big functions, up to 1200 people for alumni weekend x 3 meal. I don't know how he does it.
You could maybe find someone to help you with this in your area.

The general rule of thumb is four ounces per person of each item, beef, pasta, chicken, etc..

With finger food I usually make 150% of the guest count of each variation, but I never intend to fill people up with canapes. It might not be feasible to just serve canapes they can be difficult and/or time consuming, it will not be easy to satisfy 300 people with finger food

And remember to save something of everything for any vip

And if you're serving wine you'll need a bottle for every 2 people
